Here’s a recipe to celebrate all things green: green hummus! It’s a bright, fun twist on good old hummus. Alex and I have made this green hummus several times as a lunch recipe. Since we eat simply at the office, it’s great for munching on with some vegetables or pretzels. We first made it in honor of St. Patrick’s Day (yay green foods!). But because it was so delicious, we now make it for all sorts of other occasions as a party appetizer. Keep reading for the green hummus recipe!

How to make green hummus

We’ve taken to making hummus as frequently as we can, since it’s cheaper than purchasing it – and we can play with interesting flavors. The vibrant color of this green hummus comes from spinach, cilantro, and green onions. For some tang, it’s got a bit of lime juice. And of course, the ever present garlic!

To make it creamy, we’ve also included tahini in this green hummus recipe, a standard hummus ingredient. If you’ve never bought tahini, its a paste made of sesame seeds, typically used in Middle Eastern or Mediterranean dishes. Tahini is vegan, vegetarian, gluten free, Paleo, keto, and Whole 30 friendly, so it works for many diets. Ingredients

For the green hummus*

  • 1 small garlic clove
  • 1 15-­ounce can chickpeas (or 1 ½ cups cooked)
  • ¼ cup lime juice (2 limes)
  • 2 green onions
  • ½ cup packed cilantro leaves and tender stems
  • 2 cups baby spinach leaves
  • ¼ cup tahini
  • ¼ teaspoon cumin
  • ¾ teaspoon kosher salt
  • ¼ cup aquafaba (can liquid from the chickpeas), plus more as needed

For the garnish

  • Olive oil, cilantro leaves, Crispy Chickpeas

Instructions

  1. Peel the garlic. Drain the chickpeas into a liquid measuring cup. Juice the limes. Chop the green onions into 1 inch pieces, including the greens.
  2. Add the garlic, cilantro, green onion, and spinach, to the bowl of a food processor and process until finely chopped. Add chickpeas, lime juice, tahini, cumin, kosher salt, and water from the chickpea can (aquafaba). Puree for 30 seconds, then scrape down the bowl. Taste. If necessary, add 1 to 2 tablespoons aquafaba. Puree for 1 to 2 minutes to come to a creamy consistency. Store refrigerated for 7 to 10 days.
  3. If desired, top the hummus with cilantro leaves, a drizzle of olive oil, and Crispy Chickpeas. Serve with veggies, pita bread, or crackers (like these homemade crackers!)

Notes

*For a spicy version, you could add a bit of jalapeño pepper.

  2. Made this last night for our St Patrick’s Day dinner. It was a success! Everyone really liked it, even my “scared-to-try-something-new” husband.

  3. I am sadly allergic to avocados and therefore can’t enjoy my favorite dip guacamole. I made this without cumin and extra garlic. The color and taste is close enough to guacamole that this will become a new staple in my house. Thank you thank you thank you.
