Useful; fennel is kind of unfamiliar to me. But I recently decided to get some for a lentil soup recipe. In your video, you created a lot of discards. It reminded me that in the past few months, I have noticed that I have been saving all the discards from preparing veggies (we are a pretty much vegetarian household) and I have been using them to make veggie stock. It is super easy, I use pretty much all the discards (saving them for a day or two), and everyday cooking makes a lot of discards that don’t go into the recipe. I throw in a dozen or so pepper corns and a bay leaf with the water and boil for an hour or two. Every time the discards a little different. It is summer now (ending of summer) so I have had lots of herbs to gather from the garden and throw into my veggie stock (thyme, oregano, sage, basil, parsley), and those herbs will go away soon. Still, the veggie stock from the discards has so far been much better than the boxed stuff.
