  • Salmon fillets, wild caught if possible
  • Olive oil
  • Yellow or white miso

Types of miso

Miso is a Japanese fermented soybean paste that’s full of nutrients and savory flavor. It’s known for its intense savory flavor, otherwise known as umami: the fifth flavor. You can find miso in the international foods aisle near the Japanese ingredients. There are many different types of miso, and they all taste different. We recommend using white or yellow miso for this miso butter recipe: sometimes they’re labeled as “light miso”.

  • White miso (Shiro miso): This variety has a mild, more delicate flavor and less salt than darker miso.
  • Yellow miso: This type is fermented a little longer than white miso and has a mild, lightly sweet flavor.
  • Red or dark miso: This variety is fermented longer than white or yellow miso. It has a very strong flavor and can overwhelm the flavors in a dish, so we don’t recommend using it here.

Tips for buying salmon

The most important thing when it comes to making this honey glaze salmon recipe is the quality of the fish. Lower quality salmon can taste very fishy and have a mushy texture. It can also have a lot of white stuff (called albumin) when it’s cooked: while it’s not harmful, it doesn’t look appetizing! Here’s what to know when shopping for salmon:

  • 1 to 1 1/2-inch thick fillets are good for this recipe and look impressive; you might find it labeled center cut at the store.
  • Look for wild caught salmon. Fish that is wild caught in your country is usually a sustainable choice. (There are also quality options in well-regulated farms; see Seafood Watch Consumer Guide.)
  • Buy fresh salmon. Salmon that’s fresh from the fish counter usually has the best flavor. Frozen can work too, but try to find highest-quality frozen salmon. Avoid those big economy-sized bags, which we’ve found it typically thinner and can taste fishy.

How to cook honey glazed salmon

This honey glazed salmon recipe is broiled salmon, an efficient method that skips the oven preheating time and cooks the fish in just 10 minutes! You can also make this recipe oven baked or grilled (see below), but our favorite way is broiled because it’s so quick and it gets nicely crisp and browned on top. Oven baking can work, but the salmon comes out more moist and soft. Here are a few tips for this recipe:

  • Allow the salmon to come to room temperature before cooking (brine it if possible!). This can take 15 to 20 minutes, but it’s important. If the salmon is too cold when heat is applied, the outside can cook much faster than the inside. We recommend brining the salmon, which is letting it sit in salt water while it comes to room temperature. This helps to season the fish and also avoids the white stuff (albumin) when the fish is cooked.
  • Remember the thickness determines the cook time. 1-inch salmon takes 8 to 11 minutes to broil. Very thin salmon can broil in just 5 minutes, so adjust the cook time accordingly.
  • Keep an eye on the broiler! Salmon can go from pink to brown very quickly in the broiler: so don’t stray too far away, especially at the end of the cook time.
  • The salmon is done with the internal temperature is 125 to 130°F when measured in the thickest part. The fish will continue to cook after you remove it from the heat. To ensure full safety, the FDA recommended temperature for seafood is 145°F, or well done.

Instructions

  1. Brine the salmon* (optional): In a shallow dish whisk together 4 cups room temperature water and 3 tablespoons kosher salt until it dissolves. Place the salmon in the water and wait for 15 minutes.
  2. Preheat the broiler to high.
  3. Make the glaze: Meanwhile, in a small bowl, stir together the miso, honey, soy sauce, rice wine, garlic powder, and ground ginger.
  4. Prepare the salmon: Place a large sheet of aluminum foil on a baking sheet and brush it with olive oil. Pat each piece of salmon dry and place it on the foil skin side down. Brush the salmon with a bit of the olive oil and sprinkle with the ½ teaspoon kosher salt evenly divided among the fillets. Reserve about half of the glaze and brush the remainder on the salmon.
  5. Broil the salmon: Broil 7 to 10 minutes for 1-inch thick salmon (or less for thinner fish), until it’s just tender and pink at the center (the internal temperature should be between 125 to 130°F in the center). Pour the reserved glaze onto the salmon and garnish withe parsley, if using. Serve immediately. Leftovers last refrigerated for up to 3 days.

This garlic butter salmon recipe is pan seared salmon, which is a quick and simple method and makes a beautiful browned, crispy top to the salmon. Keep in mind you’ll want to stay by the stovetop for the entire cook time. Garlic butter salmon doesn’t work as well as a baked or broiled salmon recipe since the garlic can burn, but we’ve got a few tips for changing it up before. Here are a few tips for this recipe:

  • Remember the thickness determines the cook time. 1-inch salmon takes about 10 minutes to pan sear. Very thin salmon can pan sear in just 5 minutes, so adjust the cook time accordingly.

  • 1 pound salmon fillets, skin on (wild caught if possible)
  • ¾ teaspoon kosher salt, plus more for brining
  • Fresh ground black pepper
  • 2 tablespoons butter
  • 1 tablespoon olive oil, plus one drizzle
  • 1 tablespoon lemon juice, plus a few lemon wedges
  • 4 garlic cloves, minced
  • ½ tablespoon finely chopped fresh parsley, for garnish (if desired)

Instructions

  1. Brine the salmon* (optional): In a large shallow dish, whisk together 4 cups room temperature water and 3 tablespoons kosher salt until dissolved. Place the salmon in the water and wait for 15 minutes. 
  2. If not brining, allow the salmon to come to room temperature for 15 minutes. Pat the salmon dry with a clean towel. Rub it generously with oil and sprinkle it with the kosher salt and generous grinds of fresh ground pepper.
  3. Heat a large skillet over medium high heat and add the butter and olive oil. When butter is melted, add the salmon skin side up and cook for 2 to 3 minutes until cooked about halfway to center of thick part of salmon.
  4. Reduce to medium heat and flip the salmon (a fish spatula makes easy work of it). Tilt the pan down slightly and quickly spoon the pan juices over the top of the fish a few times. Cook for 2 to 3 minutes, then drizzle with the lemon juice and add the minced garlic. Continuously baste the salmon by spooning the garlic butter over the salmon and cook and additional 1 to 3 minutes, depending on the thickness, until just tender and pink at the center (the internal temperature should be between 125 to 130°F in the center when removed).
  5. Remove from the heat. Spritz with juice from a few additional lemon wedges and  chopped fresh parsley (if using) and serve.

This seafood pizza is bursting with flavor, starring succulent shrimp and scallops, seasoned ricotta, and gooey mozzarella cheese. It’s a winner!

Seafood Pizza

Calling all seafood lovers! This pie is just for you! This delectable seafood pizza is full of bold flavors, featuring shrimp and scallops sauteed with garlic until they’re succulent and tender. They’re sprinkled onto a layer of seasoned ricotta cheese, then topped with gooey mozzarella, red onion and herbs. Right before serving, drizzle with a warm garlic butter and it’s a little bit of heaven!

Seafood pizza is simply any pizza topped with fish or shellfish. Both a shrimp pizza and anchovy pizza qualify under that definition. But some pizzerias serve a pie that’s topped with a mix of different types of seafood, which is what we went for here. We used a mix of shrimp and scallops, chopped into pieces so you can get a juicy burst in each bite. Here’s what you’ll need:

Some notes on the scallops

We were hoping to find bay scallops for this seafood pizza. Bay scallops are harvested on the East coast of American; they’re smaller than sea scallops and their flavor is sweeter and more tender.

However, we had a very hard time finding bay scallops! Instead, we decided to use sea scallops and chopped them into 1/4-inch pieces. If you have access to bay scallops, you can certainly use them here, keeping them whole since they are smaller and don’t need to be chopped.

Seafood pizza sauce

This seafood pizza has a similar sauce to this Pizza Bianca, aka white pizza. It’s a seasoned sauce of ricotta cheese, made by simply mixing the ricotta with salt and pepper and spreading it over the dough.

Do you prefer a red pizza sauce? You can do that too! Simply swap in ⅓ cup of our quick homemade pizza sauce. It takes just 5 minutes to whip up, no cooking required.

The best way to make a seafood pizza? With homemade pizza dough! You can use purchased dough if you like, but the best tasting pizza is made with homemade dough. Here are a few of the options we’ve developed over the years, each with their own pros and cons:

  • Best Pizza Dough (top choice): This is our best oven pizza dough! It works best with a pizza stone in a standard oven.
  • Thin Crust Pizza Dough: This one is tasty and even easier; you can roll out the dough instead of stretching it.
  • Pizza Oven DoughThis dough recipe is optimized for a pizza oven.
  • Gluten Free Pizza Dough: If you’ve got gluten-free eaters, this one makes it work for everyone.
  • Pan Pizza: Use this recipe to make a single pizza in a cast-iron skillet, without special tools.
  • Sheet Pan Pizza: This simple recipe makes the equivalent of two pizzas in a sheet pan, without special tools.

Pizza making tools

If you choose our best pizza dough or thin crust dough, you’ll need a pizza stone and peel for this recipe. If you’re using a pizza oven, it typically comes with its own pizza peel that can withstand the high temperatures. Here are some notes on these tools:

  • Pizza stone: Baking on a pizza stones makes the crust crisp on the outside and chewy on the inside. Here’s the pizza stone we recommend!
  • Pizza peel: A pizza peel is a paddle that slides the pie onto the hot stone in the oven. We recommend this standard pizza peel or even better this conveyor pizza peel, which makes transferring to the oven a breeze.
  • Pizza oven (optional): An outdoor pizza oven makes the absolute best pizza! We’ve used both the Ooni pizza oven and the ROCCBOX; the ROCCBOX is our preference.

Ingredients

  • 1 recipe Best Pizza Dough
  • 2 garlic cloves, divided
  • 1/4 pound small shrimp, deveined and peeled, chopped into bite-sized pieces
  • 1/4 pound sea scallops*, uncooked
  • ¼ teaspoon plus ⅛ teaspoon kosher salt, divided
  • 1 tablespoon olive oil
  • ½ cup whole milk ricotta cheese
  • Fresh ground black pepper
  • 2/3 cup shredded mozzarella cheese
  • 2 tablespoon grated Parmesan cheese
  • ¼ teaspoon dried oregano
  • 1 handful sliced red onion
  • 1 tablespoon salted butter
  • Chopped parsley, for garnish

Instructions

  1. Make the pizza dough: Follow the Best Pizza DoughThin Crust Pizza Dough, Gluten Free Pizza Dough, or Pizza Oven Dough recipes to prepare the dough. (This takes about 15 minutes to make and 45 minutes to rest.)
  2. Place a pizza stone in the oven and preheat to 500°F. OR preheat your pizza oven (here’s the pizza oven we use).
  3. Prepare the toppings: Mince the garlic, reserving 1 clove in a small bowl for later. Pat the shrimp and scallops dry and chop them into bite sized pieces. In a medium bowl, mix the shrimp and scallops with 1 clove of the minced garlic and ¼ teaspoon kosher salt. In a medium skillet, heat 1 tablespoon olive oil on medium high heat. Cook the seafood for 1 to 2 minutes until mostly cooked through, stirring occasionally. When done, transfer to a bowl.
  4. In a small bowl, mix the ricotta with the ⅛ teaspoon kosher salt and fresh ground black pepper to taste.
  5. Bake the pizza: When the oven is ready, dust a pizza peel with cornmeal or semolina flour. (If you don’t have a pizza peel, you can use a rimless baking sheet or the back of a rimmed baking sheet. But a pizza peel is well worth the investment!) Stretch the dough into a circle; see How to Stretch Pizza Dough for instructions. Then gently place the dough onto the pizza peel.
  6. Spread an even layer of the seasoned ricotta onto the dough with a spatula, then sprinkle on ¼ cup of the mozzarella cheese. Add the shrimp and scallops, reserving the liquid at the bottom of the bowl. Top with the remaining ¼ cup mozzarella cheese and Parmesan cheese. Top with red onion, oregano, and 2 pinches kosher salt.
  7. Use the pizza peel to carefully transfer the pizza onto the preheated pizza stone. Bake the pizza until the cheese and crust are nicely browned, about 5 to 7 minutes in the oven (or 1 to 2 minutes in a pizza oven).
  8. Make the garlic butter and serve: Allow the pizza to cool for a minute or two while you make the garlic butter. In a small saucepan, melt 1 tablespoon butter with the reserved 1 minced garlic clove. Top the pizza with garlic butter and chopped parsley. Slice into pieces using a knife, and serve immediately (cutting it with a knife is easiest to cut through the shrimp).

This salmon Greek salad is very simple and comes together in 30 minutes or less! Here are a few things to keep in mind when preparing and serving this dish:

  • Use an English cucumber. English cucumbers are a long, thin variety with a sweeter flavor, imperceptible skin, and less pronounced seeds than a standard cucumber. We recommend using them in most cucumber recipes because you don’t need to peel or seed them! If you use a standard cucumber, make sure to peel and seed.
  • Use baby arugula. Baby arugula (sold in boxes or bags) has a much milder flavor than standard arugula, which is sold in a bunch. If you can’t find it, use a different leafy green like spinach or mixed greens.
  • The recipe is very forgiving, so add ingredients to taste. Want to use more tomatoes or cucumber? Feel free! Do you prefer lettuce over baby arugula? Use that instead!

  • Know your types of salmon. We tend to like Coho salmon for its mild flavor: it’s a good middle of the road option in terms of price. Of course, King salmon is incredible but it’s expensive and we wouldn’t recommend it for this recipe. Atlantic salmon is most often farmed and not available wild caught. Ask about its source at the fish counter.

Ingredients

  • 1 recipe Salmon Bites
  • 3 large ripe tomatoes, chopped into rough chunks
  • 1/2 large red onion, thinly sliced
  • 1 large English cucumber, cut into 1/2-inch pieces (or peeled, de-seeded and chopped for a standard cucumber)
  • 2 cups baby arugula
  • 2 tablespoons capers, drained
  • 1 cup Kalamata olives
  • 2 to 4 ounces high quality feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • ¼ teaspoon kosher salt, plus more to taste

Instructions

  1. Prepare the Salmon Bites by completing Steps 1-3.
  2. Chop the tomatoes, red onion and cucumber as noted above.

Buying tuna for these recipes? Here are a few notes on finding great canned tuna or fresh ahi tuna:

  • For canned tuna, look for light tuna caught by pole and line fishing, which is the most sustainable choice. Light tuna that comes from skipjack has the lowest mercury levels of all types of tuna. (Read more here.)
  • Look for ahi tuna labeled sushi-grade or sashimi grade. While there are no specific regulations around the label sushi-grade, it means it’s high quality fish that is safe to be eaten raw. (Read more here.) Look at your local fish counter for a tuna steak that has a firm texture and a bright red color.

Ingredients

  • 8 ounces pasta: shells or bowties (farfalle)
  • 1 cup frozen peas
  • 3 green onions (or ¼ teaspoon onion powder)
  • ¼ cup minced red onion
  • 2 5-ounce cans tuna
  • ½ cup mayonnaise*
  • 1 ½ tablespoons white wine vinegar
  • ½ teaspoon dried dill
  • ½ teaspoon kosher salt
  • Optional: ½ cup feta cheese crumbles

Instructions

  1. Cook the pasta (and peas): Start a pot of salted water to a boil. Boil the pasta until it is just al dente. Start tasting a few minutes before the package recommends: you want it to be tender but still a little firm on the inside; usually around 7 to 8 minutes. In the last 1 minute, add the peas. Drain the pasta and peas, then rinse with cold water. 
  2. Prep the remaining ingredients: Meanwhile, thinly slice the green onions. Mince the red onion. Drain the tuna and flake it with a fork. Place them in a large bowl with the mayonnaise, white vinegar, dill, and kosher salt

It’s a fun trick to whip out for a weeknight meal or when you’re entertaining guests, and it comes together in a flash. We like broiling the salmon to make it even quicker than baking! Here are a few notes on how to put it together.

Ingredients in brown sugar salmon

This brown sugar salmon recipe features a simple glaze featuring brown sugar, Dijon mustard and seasonings. It’s based on a concept where you simply mix equal parts brown sugar and mustard and paint it onto salmon, but we adapted it a few tweaks and extra seasonings to really make the flavors shine. The ingredients you need for brown sugar glazed salmon are:

  • Salmon fillets, wild caught if possible
  • Brown sugar
  • Dijon mustard
  • Olive oil
  • Onion and garlic powder
  • Salt and pepper

Tips for buying salmon

The most important thing when it comes to making salmon is the quality of the piece of fish. The type of salmon you can buy varies greatly. The quality of salmon you can find at the store varies greatly. Lower quality salmon can taste very fishy and have a mushy texture. It can also have a lot of white stuff (called albumin) when it’s cooked: which isn’t harmful but just doesn’t look appetizing! Here’s what to know when shopping for salmon:

  • 1 to 1 1/2-inch thick fillets are handy for this recipe; you might find it labeled center cut at the store. Try to find something that looks like the fillets in this photo.
  • Buy fresh salmon. Salmon that’s fresh from the fish counter usually has the best flavor. Frozen can work, but try to find highest-quality frozen salmon: avoid those big economy-sized bags (we’ve found this type can be thinner and taste fishy).
  • Look for wild caught salmon. Fish that is wild caught in your country is usually a sustainable choice. (There are also quality options in well-regulated farms; see Seafood Watch Consumer Guide.)

How to cook brown sugar salmon

This brown sugar salmon recipe is quick and simple, partially because it uses a very fast cooking technique: broiling! Broiled salmon is efficient because it skips the oven preheating time, and the fish can cook in about 10 minutes. Here are a few tips for broiling brown sugar salmon:

  • Allow the salmon to come to room temperature before cooking. This can take 20 to 30 minutes, but it’s important. If the salmon is too cold when heat is applied, the outside can cook much faster than the inside. This makes it browned on the outside but still cold on the inside.
  • Remember the thickness determines the cook time. Very thin salmon can broil in just 5 minutes, but for this recipe we recommend a thicker piece. 1-inch salmon takes 8 to 11 minutes to broil.
  • Keep an eye on the broiler! Salmon can go from pink to brown very quickly in the broiler: so don’t stray too far away, especially at the end of the cook time!

How to know when salmon is done

The best way to know when salmon is done is to use a food thermometer! The internal temperature of the fish should measure 125 to 130°F in the thickest part of the salmon. The fish will continue to cook after you remove it from the heat. To ensure full safety, the FDA recommended temperature for seafood is 145°F, or well done.

Don’t have a food thermometer? You can use visual cues. Cook until the fish is just tender and pink at the center; it should also flake with a fork. It’s easy to overcook salmon, so the best way to measure is with a thermometer.

Brown sugar salmon

Alternate method: grilled brown sugar salmon

You can also make this brown sugar salmon recipe as grilled salmon! In the summer, it’s our favorite way to make it. Use the method in this Marinated Grilled Salmon to transform this recipe by doing the following:

  • Make the glaze as listed in the recipe below.
  • Place the salmon in a large dish or container skin side up, and pour in the brown sugar glaze. Marinade for at least 30 minutes at room temperature.
  • Place the salmon on a baking sheet. Brush it liberally with the marinade and discard any marinade. Sprinkle with the kosher salt (split between the fillets) and fresh ground pepper.
  • Grill the salmon over indirect heat skin side up for 3 to 5 minutes, until grill marks appear and it releases from the grates. Flip and cook another 2 to 5 minutes, depending on the thickness of the salmon, until flaky and just pink at the thickest portion and the internal temperature is 125 to 130°F. Allow to rest for a few minutes, then serve.

  • 1 pound thin asparagus*
  • 1 pound salmon, wild caught if possible
  • 2 tablespoons olive oil
  • Kosher salt and fresh ground black pepper
  • Lemon
  • Minced fresh herbs (like chives, mint or thyme), for garnish

Instructions

  1. Allow salmon to come to room temperature.
  2. Preheat the oven to 425 degrees Fahrenheit. Line a baking sheet with foil.
  3. Trim the asparagus. Place it on the baking sheet and toss it with 2 tablespoon olive oil (this also oils the foil). Sprinkle with ½ teaspoon kosher salt and fresh ground black pepper.
  4. Pat the salmon dry and place it on the foil. Drizzle it with 1 teaspoon olive oil. Sprinkle the salmon with ½ teaspoon kosher salt and fresh ground black pepper. Place asparagus around the salmon. Slice the lemon into wheels and place them on top of the asparagus (but not the salmon). Squeeze juice from the two ends of the lemon onto the tray. Then add the chopped fresh herbs on top of everything.
  5. Bake 9 to 12 minutes until the asparagus is tender at the thickest part, and the salmon is just tender and pink at the center (the internal temperature should be between 125 to 130F in the center for done, or 10 degrees less if you’re broiling). If the salmon is done before the asparagus (the asparagus is thick), remove it from the tray and continue cooking just the asparagus until tender.

Notes

*Thin asparagus is best, so try to find the thinnest you can when shopping. If all you can find is thicker asparagus, you may need a little longer to roast (up to 15 minutes). Just remove the salmon from the tray if it’s already done and finish the asparagus by itself.

  • Tend toward fresh salmon. Buying salmon fresh from the fish counter usually has the best flavor. But frozen can work too. Just try to find higher quality frozen salmon and not a big economy-sized bag (we’ve found this type can taste very fishy).
  • Know your types of salmon. Coho salmon has a nice mild flavor: it’s a good middle of the road option in terms of price. Of course, King salmon is incredible but it’s on the expensive end. Atlantic salmon is often farmed, but can be a sustainable option; we find it’s better when purchased from a fresh counter (versus frozen). Ask about its source at the fish counter.

Main methods for cooking salmon

There are five major methods for how to cook salmon, which are reflected in the salmon recipes above! No matter the method, we recommend using a food thermometer to assess doneness. Salmon is done when the internal temperature measures 125 to 130°F at the thickest point for medium cooked salmon (medium rare is 120°F). The fish will continue to cook after you remove it from the heat. To ensure full safety, the FDA recommended temperature for seafood is 145 degrees, or well done.

(Read more here.) It’s safe to eat, but it does look less than appetizing on top of a beautiful fillet. Here are a few ways to reduce the albumin when you cook salmon:

  • Cook it at a lower temperature to cook it more gently (325 degrees Fahrenheit)
  • Brine the salmon in a salt and water solution before baking.

Ingredients

  • 1 pound salmon fillets, skin on
  • ½ tablespoon neutral oil, for pan frying
  • ¼ cup regular soy sauce
  • ¼ cup honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon olive oil
  • ¼ teaspoon garlic powder
  • 2 garlic cloves, grated
  • 1 teaspoon fresh grated ginger
  • 1 tablespoon cornstarch
  • 6 tablespoons water
  • For the garnish: Minced green onions, toasted sesame seeds

Instructions

  1. Place the salmon on a plate on the counter and allow it to come to room temperature before cooking, about 15 to 20 minutes (this is about the time it takes for the oven to preheat). Pat the fillets dry, then rub neutral oil on all sides of salmon. Sprinkle with kosher salt.
  2. Preheat the oven to 400 degrees Fahrenheit.
  3. Meanwhile, make the sauce (makes ½ cup): In a small saucepan, combine the soy sauce, honey, rice vinegar, oil, garlic powder, grated ginger and grated garlic over medium heat. Bring to a simmer and then reduce the heat to low.
  4. In a small bowl, whisk together the water and cornstarch. Pour the mixture into the saucepan and whisk until the sauce thickens, about 1 minute. Remove from the heat. (Use immediately or refrigerate for up to 2 weeks.) Divide the honey garlic sauce into a bowl with 3 tablespoons and a bowl with the remainder.
  5. When the oven is preheated, heat a dry oven-proof skillet over high heat until very hot. Place the salmon skin side up onto the hot skillet. Cook without touching for 2 to 3 minutes to sear the top of the salmon, until the center of the salmon is starting to cook and you see a layer of cooked flesh. Turn off the heat and use a thin spatula to flip the salmon. Brush the top and sides of the salmon with the reserved 3 tablespoons honey garlic sauce.
  6. Place the skillet in the oven and bake for 3 to 5 minutes (depending on thickness of salmon), until just cooked through. The internal temperature should be between 125 to 130°F when measured at the thickest point of the fillet.
  7. Use a hot pad to remove the skillet from the oven. Spoon the desired amount of remaining honey garlic sauce onto the top (typically we use another 3 tablespoons). Sprinkle with sesame seeds and chopped green onions and serve.

  • This recipe makes 4 large burgers. If you prefer, you can make smaller burgers or even make them into smaller patties that are easy to dip.

  • Any size: Size doesn’t matter here since the shrimp will be ground before cooking.
  • Peeled and deveined: Use fully peeled shrimp for quick and easy prep, or you can peel your own.

Ingredients

  • 1 1/2 pounds shrimp, peeled and deveined
  • 1/4 medium white onion, roughly chopped
  • 1 garlic clove
  • 1 handful fresh parsley
  • ¾ teaspoon kosher salt
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried thyme
  • ¼ teaspoon fennel seed (optional)
  • ½ teaspoon cumin
  • ⅛ teaspoon cayenne, optional
  • 3 tablespoons olive oil, for cooking
  • Mustard sauce, tartar sauce, or remoulade

Instructions

  1. Remove all shells from the shrimp, rinse it, and pat it dry.
  2. In a food processor, pulse the onion and garlic several times until minced. Add the shrimp, parsley, salt, paprika, garlic powder, onion powder, dried thyme, fennel, cumin, and cayenne. Pulse 15 to 20 times until ground, but not pureed. Form the mixture into 4 patties and place them on a plate or in a sealed container. Refrigerate 15 minutes to allow them to set.
  3. In a large, heavy bottomed, skillet, heat the olive oil over medium high heat. Cook 4 to 5 minutes per side until browned and interior temperature reaches 145°F. Alternatively, brush the patties with olive oil and grill on direct medium-high heat for 3 to 4 minutes per side and interior temperature reach 145°F.
  4. Serve on burger bun with lettuce, tomato and onion slices, along with mustard sauce, tartar sauce or remoulade.
