Lemon Herb Cucumber Water Recipe

Happy Labor Day! We’re doing a little labor on this day (shh!), but less than normal. Plus, we got to have a lovely weekend (not working, mainly!) and entertained family and friends in our new home. Man, it was a chore to get this house put together, but it feels so darn good to see my nephews’ smiling faces as they stumble about and our dear friend’s adorable children wipe purple blueberries from their lips and onto our dining room table. This house is being lived in instead of worked on finally, and it feels so good.

Here’s a super simple tip for entertaining that we used this weekend—for a tasty, easy, and healthy drink, throw some sliced cucumbers, lemons, and any herbs you have on hand into some water and let it marinate for a bit. You’ll get a super refreshing drink for minimal effort, and it seems fancy. Though our dear friend’s son couldn’t help but comment about the “plants in my drink.”

How to make infused cucumber water

Making infused water is super simple and requires just a few ingredients. Thinly slice cucumbers and lemon and pop them into a large pitcher along with a few handfuls of fresh herbs. Here we used rosemary, thyme, and mint. Top everything off with water and set the pitcher in the fridge to chill.

Tip: Because you’ll be drinking this water, you’ll want to use an organic lemon for this infused water recipe! Lemon peels soak up lots of pesticides, so buying organic is important! You’ll also want to thoroughly wash the herbs and cucumber, just to be safe.

This cucumber water is best enjoyed the day you make it. Feel free to top off the water jug throughout the day as you fill up your glass. If the water loses its flavor, add in a few more fresh herbs to revive it. (You can also add in other fruits you have that are going bad or that you’d otherwise throw out, such as strawberry tops and soft apples.) Drink up, and enjoy the day! Ingredients

Scale
  • 1/2 cucumber
  • 1 lemon
  • 2 sprigs rosemary
  • 1 handful thyme
  • 1 handful mint

Instructions

  1. Wash and thinly slice ½ cucumber and 1 lemon.
  2. Fill a pitcher with water. Add lemon slices, cucumber slices, and herbs.
  3. Refrigerate for 1 hour before serving.

  1. Thanks for the memories! When we were in Ireland, many restaurants brought beautiful wine bottles to our tables filled not with wine, but with herby, chilled water. Lots of mint, cucumber… It was lovely and refreshing and beautiful. Great for all those days spent walking!
