Here’s a delicious pineapple juice cocktail we can’t believe we hadn’t tried…until now. The Pineapple Mojito! The classic Mojito is one of our top greatest cocktails of all time: bubbly, minty, and artfully simple. Add tropical pineapple to the mix, and it’s a symphony of flavor! The sweet tart of the fruit balances the tangy lime and sweet cooling mint perfectly. Every time we try a new mojito flavor, we fall more in love with this classic cocktail.

What’s in a pineapple mojito?

The pineapple mojito is a fruity spin on the Classic Mojito, a classic cocktail invented in Havana, Cuba. The origins of the drink stem back hundreds of years, but it took off in America in the 1930’s when Ernest Hemingway helped to popularize the modern version.

The pineapple spin simply adds pineapple juice to the classic ingredients. Here’s what you’ll need for this cocktail:

All you need to know about making a pineapple mojito? How to muddle mint! Muddling is gently mashing herbs or fruits to release their juices. This is how you infuse mint flavor into the drink, instead of simply using it as a garnish. Here’s what to know about making this pineapple mojito:

  • Use a cocktail muddler. It’s the right tool for the job! Here’s the cocktail muddler we use. Don’t have one? Use an unfinished wooden spoon.
  • Muddle the mint first. Gently mash the herb to get out all the oils. You can do this right in the cocktail shaker. (Smell it while you muddle: isn’t it amazing?)
  • Add the remaining ingredients, ice and shake! Then strain out the drink. Don’t have a cocktail shaker? You can use a glass jar with a cover (poke holes in the lid to strain it out).

Make a pineapple mojito pitcher (for 8!)

Instead of making a single drink, you can also make a pineapple mojito pitcher! This is perfect for entertaining. Make this Mojito Pitcher recipe but add pineapple juice. The pitcher uses mint syrup to infuse the mint flavor, instead of muddling. Here’s what to do:

  • Make the Mojito Pitcher, adding 1 cup pineapple juice to the pitcher with the mint syrup. (Make sure the pitcher is large enough!)
  • Add additional pineapple wedges and mint to the pitcher as a garnish. Voila!

Ingredients

Scale
  • 6 mint leaves, plus additional for garnish
  • 2 ounces* white rum
  • 1 ounce lime juice
  • 1 ounce pineapple juice
  • 1 ounce simple syrup or maple syrup
  • 2 to 4 ounces soda water
  • For serving: Ice (try clear ice), pineapple wedges

Instructions

  1. In a cocktail shaker, muddle the mint leaves. Add the rum, lime juice, pineapple juice, and simple syrup and fill the cocktail shaker with ice. Shake until cold.
  2. Place ice into a glass, and strain in the liquid. Top off the glass with soda water. Garnish with additional mint leaves and pineapple wedges.
  3. Pitcher variation (8 servings): Add 1 cup pineapple juice to this Mojito Pitcher recipe, and garnish with pineapple wedges and mint.
