Ingredients
- 2 ounces* gin
- 1 ½ ounces POM Wonderful 100% Pomegranate Juice
- ½ ounces lemon juice
- ¾ ounce simple syrup
- 1 egg white**
- 1 ounce soda water
- For the garnish: rosemary sprig (optional)
Instructions
- Place the gin, POM juice, lemon juice, simple syrup and egg white in a cocktail shaker. Shake vigorously for 15 seconds.
- Fill the shaker with ice and shake for 30 seconds until cold.
- Strain the drink into a glass and top with the soda water; the egg white foam forms on top. If desired, garnish with a rosemary sprig. Serve immediately.

It’s got good bones to make a great cocktail. I followed this recipe exactly as posted, including the egg white and brand of pomegranate juice. The balance of sweet and tart could use a little tweaking; it was slightly too sweet. That could be remedied with a bit more lemon, which would of course change the flavour, or a little less syrup. Additionally, if you’re going to use rosemary as a garnish, why not incorporate it into the drink somehow? Whether is be making a rosemary simple syrup or lighting a rosemary sprig with a match and collecting the smoke in the glass- although smoke definitely pairs better with darker spirits. Either way, it is a great cocktail idea and I will be making it again with a few flairs of my own.
