The flavor is rich and creamy, with a subtly sweet nuance. It’s a great alternative nut butter for people with certain types of nut allergies. Use it to add pizzazz and protein to dishes of all sorts: spread it on toast and top with strawberries, swirl it into oatmeal, or use it atop a stack of pancakes.

Pistachio butter requires just a short handful of ingredients: but the type of nuts is important here. Here’s what to look for:

  • Shelled, unsalted pistachios: raw or roasted: Unsalted is key here: we tried the flavor with salted pistachios and it was much too salty! Shelled pistachios are also essential as it saves you hours of work. Use raw nuts for the best green color. But you can also use roasted: the color is more brown and muted.
  • Sugar: Use granulated sugar or another solid sugar of choice. Avoid honey or maple syrup, as liquid sweeteners can cause nut butter to seize up.
  • Salt: Using unsalted nuts allows you to customize the salty flavor to taste.

Keep in mind: pistachios can be a bit pricey. You can make a half recipe to cut down on costs, or price compare with purchased pistachio butter.

How to make pistachio butter

Making pistachio butter at home is very simple: all you need is a food processor! This is a spin on the base recipe we use for almond butterpeanut butter, and cashew butter, with a few tweaks. Here’s the basic idea (or jump right to the recipe):

  • Step 1: Blend! You’ll need a food processor for this step. Throw in the nuts and process for several minutes until they form a creamy butter. The nuts go from dry to sticky to creamy in just a few minutes.
  • Step 2: Flavor! Add sugar and salt, then blend again. Taste and see whether you’d like it sweeter or saltier, then add more to taste.

How to store homemade pistachio butter

Often we store nut butter in the pantry, but to be safe we recommend storing this one in the refrigerator. How long does homemade pistachio butter last? Store pistachio butter refrigerated for up to 1 month. If you’d like to keep it in the pantry, store it for 1 or 2 weeks. (Ours usually lasts about 1 week because we eat it so fast!)

Ingredients

  • 2 cups unsalted shelled pistachios, roasted or raw*
  • 1 teaspoon granulated sugar
  • ⅛ teaspoon salt

Instructions

  1. Place the pistachios in a food processor process for about 3 to 4 minutes. You’ll see them start out crumbly, then get gradually creamier and creamier.
  2. Add the sugar and salt (double check that you’re using unsalted pistachios before you do!). Scrape down the bowl and process again for about 1 minute.
  3. Taste and add additional salt or sugar as necessary. Transfer the pistachio butter to a jar. Store refrigerated for up to 1 month.

Notes

*We don’t recommend using salted pistachios here, because the salty flavor can be too strong. Use unsalted nuts and add salt to taste. Use raw nuts for the best green color, but you can also use roasted.
