What are mini potatoes?

Mini potatoes are any small waxy potatoes. In contrast to russet potatoes, waxy potatoes have a rich buttery, rich texture of their interior. The size of mini potatoes varies: there’s no standardized definition of what constitutes “mini.” Some stores only have baby potatoes, but for this recipe we were able to find very very small potatoes. The type you’ll be able to find varies based on the store! The potatoes may be labeled as:

  • New potatoes
  • Baby potatoes
  • Mini potatoes (typically even smaller than baby)
  • Creamers
  • Petite potatoes
  • Baby potato medley: a mix of yellow, red and purple potatoes

How to make roasted mini potatoes: some tips!

Making mini roasted potatoes is very easy: you’ll simply roast them at high heat until tender. It takes about 30 minutes, but it depends on the size of your potatoes! Here are the basic steps (or jump to the recipe below):

  1. Preheat: Preheat the oven to 425 degrees Fahrenheit.
  2. Prep the potatoes: Wash the potatoes and pat them dry. Slice them in half. In a large bowl, mix them with olive oil, garlic powder, smoked paprika, and kosher salt.
  3. Roast: Line a baking sheet with parchment paper. Spread the potatoes in an even layer. Roast for about 30 to 35 minutes without stirring until browned and fork tender.
  4. Season: Remove the potatoes from the oven and toss with chopped chives. Keep reading for some additional seasoning ideas.

Flavor variations and seasoning ideas

  • 1 1/2 pounds mini potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ¾ teaspoon kosher salt
  • 1 tablespoon chopped chives

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Wash the potatoes and pat them dry. Slice them in half.
  3. In a large bowl, stir together the potatoes, olive oil, garlic powder, smoked paprika, and kosher salt.
  4. Line a baking sheet with parchment paper. Spread the potatoes in an even layer on the sheet cut and make sure they are side down. Roast for about 30 to 35 minutes without stirring until browned, depending on the size of the pieces.
  5. Remove the potatoes from the oven and toss with the chives. You can also spritz with lemon wedges for a pop of tangy flavor.

    Baked the basic recipe (smaller quantity) in our toaster oven.
    Done sooner that expected, at least 5 minutes, maybe a little more.
    Eager to try your suggested variations.

    1. You could definitely try! We haven’t tested but it should work. You could reheat them in a 400 degree oven until warmed through (15 to 20 minutes? not sure), or you could try reheating them in a skillet with a bit of olive oil. Good lucK!
