How to make roasted mini potatoes: some tips!
Making mini roasted potatoes is very easy: you’ll simply roast them at high heat until tender. It takes about 30 minutes, but it depends on the size of your potatoes! Here are the basic steps (or jump to the recipe below):
- Preheat: Preheat the oven to 425 degrees Fahrenheit.
- Prep the potatoes: Wash the potatoes and pat them dry. Slice them in half. In a large bowl, mix them with olive oil, garlic powder, smoked paprika, and kosher salt.
- Roast: Line a baking sheet with parchment paper. Spread the potatoes in an even layer. Roast for about 30 to 35 minutes without stirring until browned and fork tender.

Can these be made ahead and frozen? If so how would be the best way to reheat and serve?
You could definitely try! We haven’t tested but it should work. You could reheat them in a 400 degree oven until warmed through (15 to 20 minutes? not sure), or you could try reheating them in a skillet with a bit of olive oil. Good lucK!
