The inspiration behind this apple cobbler

A few weeks ago I returned from the farmer’s market with some gorgeous tart apple varieties, Jonathon and Holiday, begging to be baked. Remembering our friend Melissa and the knock-out biscuits she’d served us on a recent visit, Alex and I thought about combining biscuits and cinnamon-y baked apples for an irresistible dessert treat.

That first bite of a new recipe is such a moment of truth, isn’t it? If you’re like me, you stare at the taster intently, blurting out, “What do you think?” before he’s chewed twice. I try to reserve that treatment mainly for Alex, if I can help it! This time, I bided my time, and before I could ask, he announced, “I love it!” Good enough for me, which is why we’re sharing this apple recipe with you today.

Here are a few notes on this skillet apple cobbler before you try it out:

  • The biscuit to apples ratio in this apple cobbler favors the biscuit, which we enjoyed. The biscuit intentionally has no added sugar; we found it to be a nice contrast to the sweet apples, if a bit non-standard. 
  • Using a apple-peeler-corer-slicer would absolutely speed up prep time here! But we peeled and sliced the old fashioned way and it worked just fine.
  • Serving suggestions: Serve this skillet apple cobbler with vanilla ice cream, homemade cinnamon ice cream (vegan), whipped cream, yogurt whipped cream, or coconut whipped cream. It’s amazing whatever way you serve it!

For the filling

  • 6 crisp tart apples (2 pounds Granny Smith, Jonathon, Holiday; enough for 6 cups sliced)
  • ¼ cup granulated sugar
  • 2 tablespoons whole wheat flour
  • 1 tablespoon lemon juice
  • 1 pinch kosher salt
  • ½ teaspoon cinnamon

For the biscuit topping

  • 1 cup all purpose flour
  • ½ cup whole wheat flour
  • 2 teaspoon baking powder
  • ¾ teaspoon kosher salt
  • 6 tablespoons cold unsalted butter
  • ½ cup Greek yogurt
  • ½ cup milk
  • Sweetened whipped cream or vanilla ice cream, for serving

Instructions

  1. Preheat oven to 425°F.
  2. Make the filling: Peel and slice the apples. In a 10-inch ovenproof skillet, place the apples and mix in the granulated sugar, wheat flour, lemon juice, kosher salt, and cinnamon. Place the skillet in the oven for 10 to 15 minutes, until the apples are slightly thickened and bubbly.
  3. Prepare the biscuit topping: In a large bowl, combine the all purpose flour, whole wheat flour, baking powder, and kosher salt. Cut the butter into small pieces, then cut it into the flour mixture using a pastry cutter until it resembles coarse meal.
  4. Add the Greek yogurt and milk and stir just until dough is formed. If it seems dry and is not holding together, add slightly more milk. Do not overmix.
  5. Add the topping and bake: Remove the skillet from oven and drop small rounds of dough onto apples, leaving some space between each biscuit. Return the skillet to oven and bake until the biscuits are golden brown and fruit is bubbling, approximately 20 to 30 minutes.
  6. Cool about 15 minutes before serving. Serve with whipped cream, vegan whipped cream, or vanilla ice cream.

  2. Ha, I know that exact feeling waiting to hear from the tester. ;-) I made a cherry skillet cobbler this summer and I think you’re right, the day may be just the slightest bit better with a cobbler. This apple cobbler looks fantastic – love the biscuit topping!
