Vegan Cashew Sauce

Description

This vegan cashew sauce takes any recipe to the next level! Dollop on chili, drizzle on salads, or spread on sandwiches like mayo. It takes only 5 minutes of hands on time!

  1. Place the cashews in a bowl and cover them with water. Soak for at least 1 hour (or the very least, 30 minutes if you have a high speed blender). For preparation in advance, you can soak the cashews overnight, which is even better.
  2. Drain the cashews. Add the cashews, broth or water, and salt to a blender, then blend on high for 1 minute. Stop and scrape, then add additional liquid if necessary to come to a creamy consistency. Blend for several minutes until creamy and smooth. (Store in a sealed container in the refrigerator for up to 1 week or in the freezer for several months.)

Notes

*This recipe doesn’t call for salted cashews, but if that’s all you can find, add only half of the kosher salt when you first blend the sauce. Then add additional salt to taste.

Just as a user-experience suggestion: If there is a way to set all your links to open in a new page, so I can open multiple tabs of multiple sauces at once instead of having to either A.)bookmark each separately, or B.)flip back and forth between the pages and scroll back through the whole thing to find that one recipe I wanted next, that would be super. Otherwise, awesome recipes. I’m excited to try a few. I find a number of recipes are highly complicated and it’s hard enough for me to assemble/clean/return a food processor or blender (tiny, shared space kitchen problems), so by the time I do all that, if I’m staring down a list of ingredients to prep plus all the cooking, it quickly overwhelms my physical ability. So it’s nice to have these things to prep just once quick at the beginning of my week to make the rest of the meals as simple as boil water for pasta/vegetable, add sauce and salad. Game changer for someone with a disability, but hard to get into if you haven’t managed to get special tools like a blender. I’d suggest those looking to try their thrift store/Value Village or whatever, you can usually find some decent working appliances there for cheap, and it’s a good place to put them if they work and you just have no space.
