How to make the best avocado grilled cheese

This avocado grilled cheese is not rocket science, but it certainly tastes like it! Here are a few key things to remember while making your avocado grilled cheese sandwich:

  • Salt the tomatoes & avocado. Salt the tomatoes and let them drain for a bit before whipping up the sandwich. Then adding just the right amount of kosher salt on top makes for gooey, toasty perfection.
  • Liberally butter the bread OR use mayo. If you don’t put enough butter on the bread slices, they won’t turn a beautiful golden brown. You want the bread to get nice and toasty when making grilled cheese! Another option: use mayo on the outside of the bread — and inside! It makes it even more rich and savory.
  • Use good quality shredded cheese. The star of any homemade grilled cheese is — you guessed it — the cheese. It’s important that you buy good quality cheese. If your grocery store has a deli counter, buy the cheese there instead of getting the pre-packaged stuff for a better flavor. Shredded cheese is the key to getting a fluffy, super cheesy, melty grilled cheese.

Use an artisan style bread for best results.

Use a hearty artisan bread to take this avocado grilled cheese over the top! We’ve found that heartier, crusty bread makes for an excellent grilled cheese that tastes like one from your favorite restaurant. Remember that whatever bread you use needs to be strong enough to hold the tomato and avocado filling, too!

If you’re up for trying a homemade bread, we have lots of bread recipes to try! Here are a few we’d recommend:

  • Easy Homemade Bread This easy loaf bread would be perfect for grilled cheese!
  • Whole Wheat Bread Our whole wheat bread is similar but has more whole wheat for nutrients and flavor.

How to Cut an Avocado

How to slice an avocado

There’s one thing you must know about an avocado: how to cut it safely! Here’s the best way to cut an avocado (see the video below!):

  1. Using a large chef’s knife, cut lengthwise around the avocado. Twist the two halves to separate them.
  2. Place a towel in your hand and put the avocado on top. With a gentle but quick motion, tap the knife into the avocado pit.
  3. Don’t remove the avocado pit with your hand! Instead, pull the cutting board close to your body, then place the pit against the far edge of the cutting board and pull back to release it from the knife. (Watch the video for this part!)
  4. Use a large spoon to scoop out the avocado from the peel. Place the avocado with the cut side down, then cut it into slices. To dice the avocado, turn the slices and cut crosswise to make diced avocado.

Instructions

  1. If you’d like, pre-toast the bread slices in the toaster (this makes sure to get them perfectly crunchy before grilling the sandwich).
  2. Slice the tomatoes, place the slices on a plate, and sprinkle with kosher salt. Slice the avocado (see the video instructions) and sprinkle it with salt.
  3. Spread butter or mayo on one side of each of the 4 bread pieces. Heat a griddle pan to medium high heat. Place 2 pieces of bread on the griddle, buttered side down. On each piece, spread ¼ cup mozzarella cheese, a sprinkle of shredded Parmesan, tomato slices, avocado slices, the other ¼ cup mozzarella cheese, Parmesan, a sprinkle of kosher salt, and the other piece of bread (spread with mayo if you’d like).
  4. When the bottom bread is browned, flip the sandwich and cook until the bread is toasted and the cheese is melted.

  1. Made a version of this tonight using homemade herbal bread. Was GREAT. Only problem -how can you keep the tomato and avocado slices from sliding out when you turn the sandwich over on the griddle or pan?

  2. Thanks, Alex! The only spatula tongs i have are spoon shaped. I have a pair for the BBQ but of course that didn’t come to mind.
